The intervention concerns the construction of the first PARIZÙ restaurant in Italy, located in the prestigious setting of Corso Porta Nuova in Verona. The project involved the coordinated development of all electrical and mechanical systems within a historic building subject to architectural constraints. Dabster's goal was to combine the strict performance needs of a modern restaurant business — ensuring maximum comfort for customers — with total respect for the existing context, offering invisible technological solutions and operational efficiency of the highest level.

Customer request: High performance without aesthetic compromises
Operating in the historic center of an art city involves formidable logistical and regulatory constraints. The challenge presented by PARIZÙ required the inclusion of a complex plant infrastructure — typical of commercial catering: cooling powers, smoke extraction, water and sanitary and electrical networks — inside an enclosure that did not allow invasive interventions. The absence of storage areas, limited access to the construction site and the stringent requirements of the Superintendence of Archaeology, Fine Arts and Landscape have made interdisciplinary coordination and millimetric management of interference the central and most critical elements of the entire design development.
The Dabster solution: extreme customization and 'invisible' implants
To circumvent structural limitations without sacrificing performance, Dabster has adopted a design approach aimed at total customization (customization) of the plants, activating its Business Units for an almost tailor-made intervention:
  • BU Mechanical Systems (HVAC): Air conditioning and air treatment systems have been developed using ultra-compact machines. We have favored optimized channels on the available volumes and retractable diffusers, preserving the aesthetic cleanliness of the rooms. Special attention has been paid to the heart of the kitchen: the air extraction system has been equipped with advanced filtration technologies to eliminate the impact of odour emissions and reduce noise, fundamental requirements in densely populated urban centers

  • BU Electrical and Lighting Design: The division has taken care of the efficient distribution of the power backbones using compact and camouflaged panels. The lighting was designed in close synergy with the interior design of the room, integrating the lighting elements to create an atmosphere consistent with the
  • PARIZÙ brand.
  • Direction and Coordination: The entire intervention was supported by a constant dialogue between design and execution on site, ensuring timely checks and rapid adaptations during construction to promptly resolve any unforeseen events related to the historic nature of the building.

The work carried out has given PARIZÙ a fully functional environment from a technical point of view, capable of operating at an intensive pace without compromising the delicate identity of the building that houses it.
